I do have one question.. What are the 'families'? Are they groupings of novices and such for teaching, or are these families actually related people?

Families are groups of novices who take channelling classes together with a set pair of mentors. You don't need to stick with you family for the other classes, ie. ogiers, shadowspawn, etc.
