I like Ed. I really do. But there's no way in hell that he could beat Vash. Especially the manga Vash cause he's got control over his angel powers and he can do alot more that just make a cannon. An Ed doesn't knwo what the angel arm is made out of so he can't transmute it anyway. I doubt Vash would even have to use the angel arm. It would be similar to the Vash vs. Dominique fight in which Ed would go to attack but then find Vash behind him (cause of his speed) with a gun to his head and he would be forced to surrender.

Yep Vash is super fast and can dodge bullets, so whatever Ed throws at him he will dodge.

Wow, it's been a while since I posted this. In hindsight, a rather stupid and fanboyish choice on my part. Further, it displays my own lack of knowledge as to how alchemy works... ick.
