Though, through some intense thought I suppose if anyone would be looking for the 'ultimate sword', Vader and Yoda certainly wouldn't want to miss out...

Soul Calibur 2 is the only one I have played. Well, a bit of SC3 when my friend rented it, but still.

It is possible for normal swords to go head to head with light sabers. Vibroblades from the SW universe are a perfect example. So really that suggests that a very high quality weapon could take on a light saber.

Seeing as how a light saber was used to cut through a blast door in episode 1, I don't think a normal sword could hold up all that long (unless it's magical).

The Vibroblades from KOTOR and KOTOR II are a good example as Zerorush pointed out.
I always pictured them as swords that had a special alloy that negated the saber's cutting-through ability. While it wasn't breakable, it could go head-to-head against a Lightsaber.

Perhaps to make a fair fight, they turn of the slice-through option on their lightsaber? I mean, Vader is evil but I'm sure he wouldn't just run around beating people who might give him some fun if he actually didn't destroy their weapon.
