Drill and use an "easy out". Or if unsure get a pro to do it. My bolt and thread repair dude outa send me a Christmas card this year, I'm almost family!

You might be able to buy left-hand drill bits too. They will unscrew it if its not under stress, and if it remains jammed you put an Easyout down the drill hole.
The Easyout is really just a left-hand spiral anyway. Don't overtorque the Easyout, they are brittle and a broken Easyout in a hole makes it a real problem- they are too hard to drill through!

it the top hex bolt that holds the headlight.

The right way:
Drill a hole 1/3 the diameter in the dead center of the bolt(obviously not the width of the head, closer to the center the less chance of breaking the easy out). Tap easy out into hole (please use the appropriate size or your WILL break it, close enough is not good enough). Use a decent wratchet to extract, obviously left handed. Im not going to say to use a torque wrench because well that will destroy the calibration(never use a tourque wrench to undo bolts under any circumstances!!!) even though some technicians belive this tecnique is neccisary to guage when the bit is going to break but you will know when it will snap as it generaly twists like a mofo right b4 it does then the job is a compleate write off. Once 40mm of the thread is visible use a pair of vice grips to exract (the less time you spend using the easy out the better).
The dodgy quick way:
Make a valley down the center of the bolt so that its 1mm deep (like a common screw head, flat head screw driver slot what ever tech school you went to (or didnt)). Use common screw drive (flat head  ) to extract and vice grip the rest of the way.
If any of this doesnt make sense at all dont even bother cuz the fitter and turner that will eventually have to clean it up will murder you....

As mentioned an easyout should work.
Go to bunnings and ask for an easy out for the diamater bolt (Should be approx 6mm bolt for that)
